I see a lot of high volume shops using these.

Those are good for applying fabric protector.

Do they have a good spray pattern to them?

I don't have a Sure Shot sprayer. I saw one demonstrated when I went to detailing training a couple of years ago. They demonstrated by using fabric protector. It came out in a foggy mist. I am not sure if the nozzle is adjustable or changeable.

You can change the nozzles out I think. i was reading some info. on them last week. I always thought they might be good for carpet cleaners, fragrences, tire protectants, and that sort of stuff.

Can't say I've ever used that particular atomizer , but it sure looks like it would help on finger fatigue..lol, for lighter use chemicals like the fragrances, lighter water based dressings I was thinking of using these http://www.sks-bottle.com/340c/fin110.html , has anyone used 'em?
