Now that I have invested in some detailing products and polished a portion of my car, I want to adjust my washing technique. I've always used what I now see is a very primitve technique: very soft-bristle washing brush with store-bought auto detergent applied directly to the bristles, washing one panel at a time and hosing off.

From what I have read, I see I should move to the two-bucket method, and use a mitt. Ok, got it.

But, when is a full wash necessary, versus the use of these detailing sprays I hear of?

I would only use detailing sprays on light dust that'll wipe right off. Poorboy's Spray and Wipe, on the otherhand, can be used on a fairly dirty car. Then a really dirty car can use a wash... But it's all user preference. There are some that won't do anything but a wash for two specs of dust on a car vs. other who virtually never use a hose to wash except for S&W or Optimum No Rinse of Protect All Quick and Easy Wash.
